Key outputs include assisting in training and developing staff, maintaining relationships with Chadewu, participation in lodge Opex and Capex budget management, overall responsibility for Uniform Orders, bi-yearly South Africa orders, managing and implementing the FBC to-do list, overseeing operations and supporting the Operation Manager and Hospitality Manager, participating in daily guest interaction, overseeing Housekeeping, Butlers and Kitchen, assisting with daily administration and weekly/monthly reporting, liaising with Regional Support Teams, assisting in overseeing all conservation projects on Mnemba Island, participating in driving Community development projects forward, assisting in holding edging and strategic management meetings, ensuring HR procedures are maintained, assisting with IR issues, ensuring the Monthly HR Report is sent through in a timely manner. andBeyond is hiring a Senior Sous Chef for Mnemba Island, Zanzibar. This is a 2-year fixed-term position. Key outputs include maintaining high standards of professionalism within the team, providing disciplined and inspirational leadership to the kitchen team, ensuring all financial and record-keeping controls and systems are adhered to, working with the Executive Chef to ensure the menu and food are aligned to lodge quality standards, monitoring food scores and budgets, conducting daily HOD meetings, ensuring health and safety compliance including HACCP Protocols and Covid-19 Protocols, overseeing month-end stock takes, ensuring the smooth daily running of the kitchen and canteen operation, maintaining cleaning rosters compliant with Tanzanian regulations, and recording staff leave and work rosters. The successful candidate will attend HOD and morning meetings daily and hold a department meeting daily to hand over pertinent information, ensuring effective communication between kitchens, Lodge Managers, Guest Relations and Butlers.
